Jacobs Pastries is introducing Rusks to the easy Pre-mix family, but with raisins!
Melt the butter in a microwave
Combine all the wet ingredients and stir with a fork
Now combine all ingredients and mix with your hands
Next, grease a pan with butter (not spray - butter adds flavour - we always want flavour)
Pour the mixture into a pan, and flatten out to make sure all is level
Cut the sizes you want, by just cutting with a knife, and leaving in the pan
Place in a pre-heated oven (180deg) and leave for 40min
Now for the drying part
- Remove from the oven, and re-cut with a knife along lines
- Remove from the pan (easiest is with a small steel spatula, not silicon) and set in one or two other pans, leaving space in between and on their sides of the rusks
- Put back in the oven, but on 100 deg, for drying out, and leave them in there, until they start to turn golden. About 20 minutes
- Rotate all the rusks on to their other side, and leave until golden brown. About 15 minutes
